DIDO/FIFO Chefs - Fulltime 14/7

The Role: Qualified Chefs - 14/7 (10 hours worked) – Fulltime position – salary from $93,000 p/a  - $98,000 p/a  + super

• Provide breakfast, crib lunch, desserts or dinner service for residents on site (be able to work both night shift and dayshift on a rotating roster)
• Ensure food presentation, product presentation and meal service are to Sirrom standards
• Planning menus, estimating food and labour costs, and ordering food supplies.
• Monitoring quality of dishes at all stages of preparation and presentation whilst maintaining minimal food wastage
• Discussing food preparation issues with Managers, Dietitians and kitchen and front of house staff in line with client requirements
• Demonstrating techniques and advising on cooking procedures
• Maintain a strict health and hygiene standards and systems in the kitchen with proper HACCAP procedure especially around freezing or preserving foods.
• Supportive leadership, mentoring, and coaching for kitchen staff

We’re looking for candidates with:

• Trade qualified with a minimum 5 years’ post qualified experience.
• Resume must show chef capabilities in either the Cruise ship industry or 5 star hotels or similar
• Hands-on experience with bulk catering, including bistro and buffet-style service
• Candidates will be asked to show leadership qualities but be able to work in a team environment as well.
• Basic English Proficiency is a requirement.
• Strong skills in food costing, budgeting, ordering, and stock control
• Excellent problem-solving skills and ability to stay calm under pressure
• Ability to maintain strict health and hygiene standards in the kitchen
• Friendly and considerate attitude to promote a positive work environment

To be considered, you must have or be willing to obtain:

• Current Standard S11 Certificate (desirable)
• Current Coal Board Medical (desirable)
• Chef Trade Certificate – Australian Qualification (Cert III in Commercial Cookery minimum)
• Food Safety Supervisor Certificate (preferred)
• National Police Check (issued within the last 1 month)
• Ability to pass pre‑employment medical and drug screening
• Valid C Class Driver’s Licence
• Basic English proficiency
